Tequila-Lime Coleslaw with Cilantro

Few things pair better with a burger than a classic coleslaw. This one knows its way around the bar.

  • 1 1/2 cups shredded green cabbage
  • 1 1/2 cups shredded purple cabbage
  • 1 cup shredded carrots (or carrot curls, shaved with a potato peeler)
  • 1 Granny Smith apple, sliced into matchsticks
  • 3 scallions, chopped
  • 1/2 cup chopped cilantro
  • 1/3 cup mayonnaise
  • 4 tbsp fresh lime juice
  • 1 tbsp silver tequila
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp ground cumin (optional)

Place the green cabbage, purple cabbage, carrots, apple, scallions and cilantro in a large serving bowl, and toss. To make the dressing, combine the mayo, lime juice, tequila, sugar, salt and cumin in a small bowl, and whisk until smooth. Pour the dressing over the coleslaw, toss and serve alongside (or atop) your favourite burger.
