This Spanish sauce is delicious on everything from flatbread and potatoes to grilled shrimp and pasta. Perfect for vegetarians and vegans.
1 jar roasted red peppers (7 oz), drained
1/3 cup extra-virgin olive oil
1/4 cup toasted panko bread crumbs
1/4 cup toasted almond slices
2 tbsp capers, drained
1 pickled jalapeno pepper, seeded and chopped
1 clove garlic, minced
1/2 tsp smoked paprika
1/2 tsp ancho chili powder
1/2 tsp salt 1/4 tsp cumin
Place all the ingredients in a food processor, and pulse until smooth. Taste, and adjust the seasoning to your liking. The perfect dipping sauce for tapas.
