The only thing better than the perfect pot sticker is plunging it in a gingery ponzu sauce. Also great with shabu-shabu.
1/2 cup low-sodium soy sauce
1/4 cup freshly squeezed orange juice
2 tbsp freshly squeezed lemon juice or lime juice
1 tbsp water
2 tbsp mirin
2 tsp freshly grated ginger (more if you like)
1 tsp toasted sesame oil
Thinly sliced chives or scallions (optional)
Place all the ingredients in a Mason jar, secure the lid and shake. Pour into a dipping bowl, and serve. Leftovers make a great glaze for grilled chicken or shrimp.
