Peaches pair beautifully with the big, bold flavour of goat cheese. The honey and basil take it over the top. Make extras.
Place your baguette slices under the broiler or on a hot grill, and toast them on both sides.
In a small bowl, combine the goat cheese with the lemon juice, lemon zest, olive oil, basil, salt and pepper until smooth. Spread each toast with a generous dollop of goat cheese, and top with a wedge of grilled peach. Drizzle the peaches with honey, garnish with a little more basil and serve.
