This quick cheat is tangy, tasty and sure to convince everyone it’s homemade.
1 cup apricot jam
1 cup store-bought lemon spread (we used E.D. Smith)
Zest of 1 large lemon
Place the apricot jam, lemon spread and lemon zest in a small mixing bowl, and stir until combined. Use in layer cakes, or try it on toast with peanut butter.
