Serve these flaky-on-the-outside, soft-on-the-inside biscuits straight out of the oven. Just make sure you have one for everyone, because no one’s going to pass these up.
- 2 cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- 1 Tbsp sugar
- ½ tsp salt
- 1 tsp ground black pepper
- ½ cup cold butter, grated
- 1 cup medium gouda, shredded
- ½ cup buttermilk
- 1 Tbsp butter, melted
- course sea salt
INSTRUCTIONS
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- Place butter in the freezer for one hour.
- Meanwhile, in a large bowl, whisk together the flour, baking powder, baking soda, sugar, salt, and pepper.
- Grate the frozen butter into the dry mixture and mix until the butter is incorporated.
- Add the shredded cheese, distributing gently but evenly throughout the mixture.
- Add the buttermilk, and work it into the mixture using your hands. The dough should stay together when formed into a ball.
- Turn the dough out onto a lightly floured surface, and roll out into a 1-inch thick circle.
- You can use a #70 round cutter to cut the dough (or an overturned short glass tumbler). Or use a knife to cut into wedges (like a pizza).
- Place each biscuit onto the baking sheet, brush the tops with melted butter, and sprinkle with coarse sea salt. Bake 20–25 minutes, or until golden brown.
