Cider Glazed Salmon with Rosemary

December, 2015

Simple is best, and this recipe is both. A treat for the eyes and taste buds. Don’t miss out.

  • 2 cups apple cider
  • 2 tbsp balsamic vinegar
  • 2 tbsp fresh rosemary, roughly chopped
  • 2 tsp grated ginger
  • 1/2 tsp freshly cracked pepper
  • Zest of 1 lemon
  • 1 clove garlic, peeled
  • 3 salmon fillets, skin on
  • 1 tsp salt

Preheat your oven to 425˚F.

Add the cider, balsamic, rosemary, ginger and salt to a medium-sized pot, and bring to a boil over -medium-high heat. Reduce the heat to low, and simmer the mixture until it thickens and reduces to about 1/3 cup. Once reduced, remove the pot from the heat, and stir in the lemon zest.

Take your peeled garlic clove, cut it in half and rub it all over the inside of a medium-sized baking dish. Next, lightly grease the dish with olive oil or butter. Place the salmon skin-side down in the dish, and pour the prepared glaze over the salmon. Sprinkle the salmon with salt and pepper, and place in the oven for 8 to 10 minutes (depending on the thickness of the fillets). When cooked through, remove from the oven, baste with any remaining pan juices and serve.
