No time for cookies from scratch? No problem. You’re 10 minutes and 1 box of lemon cake away from delicious.
Preheat your oven to 360˚F, and line a large baking sheet with parchment paper.
In a large bowl, mix together the cake mix, eggs, oil, lemon juice and lemon zest. Cover the bowl with plastic wrap, and place it in the fridge to chill for 5 minutes.
Next, form the chilled dough into 1-1/2-inch balls, and roll them in icing sugar to coat. Space the cookies 2 inches apart on the prepared baking sheet, and bake them for 7 minutes or until cracked on the top but soft in the middle. Cool the cookies for 2 minutes on the sheet before moving them to a cooling rack.
