One taste of these caramelized onions and you’ll be adding them to everything. May we suggest you start with a burger.
- 3 medium-sized purple onions, peeled and sliced into 2-cm thick circles
- 3 medium-sized Vidalia onions, peeled and sliced into 2-cm thick circles
- 1/4 cup plus 2 tbsp extra-virgin olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp beef broth
- 2 whole heads of garlic, with the tops sliced off to expose the cloves
- 2 tsp salt
- 1 1/2 tsp freshly cracked pepper
- 3 tbsp chopped thyme
INSTRUCTIONS
- Preheat your oven to 315˚F, and line a large baking sheet with parchment paper.
- Drizzle 1/4 cup of olive oil onto the prepared baking sheet, and spread it out evenly.
- Arrange the onion slices on the oiled pan, and then flip them over so that both sides are oiled.
- Place the prepared heads of garlic sliced-side down among the onions.
- In a cup, mix the balsamic vinegar with the beef broth.
- Using a spoon, drizzle the mixture over the onions. Sprinkle each slice with salt, pepper and chopped thyme.
- Drizzle with the remaining 2 tbsp of olive oil, and place in the preheated oven to roast for 1.5 hours.
- Remove when soft and caramelized. Squeeze the roasted garlic cloves out of their skins, and toss with the onions.
- Serve warm atop your favourite burger. t8n
