This tangy versatile slaw makes an easy picnic side dish, and brings just the right amount of crunch when piled into our version of Vietnamese Sandwiches (above).
1 tbsp rice vinegar
1 tsp sugar
Red pepper flakes to taste
2 large carrots, julienned
1 green onion, thinly sliced
¼ cup fresh cilantro, chopped (optional)
In a serving bowl, whisk the rice vinegar with the sugar and red pepper flakes until combined. Add the carrots, green onion, and cilantro. Give it a quick toss and serve.
