Sometimes there’s no improving a classic. This is one of those times.
1/3 cup water
1 cup plus 2 tbsp white sugar
3 large egg whites
1/4 tsp cream of tartar
1/8 tsp salt
2 tsp vanilla extract
In a large, metal mixing bowl, whisk together the water, sugar, egg whites, cream of tarter and salt. Next heat a medium-sized pot filled with 3 cm of water over medium-high until it boils. Reduce the heat to low so that the water is barely simmering. Next, set the bowl over the pan of water (creating a double boiler) and mix with a hand-held electric mixer at low speed. Gradually increase the speed to high, and beat for 5 minutes. Remove the bowl to the counter, and mix for 2 minutes more. Beat in the vanilla, and add food colouring if desired.
