This sweet and savoury ham is easy to prepare, and frees up the oven for all the fixings. Peach and ginger mingle with zesty Dijon for a subtle sweet and spicy surprise.
- 8–10 lbs cooked ham, spiral-cut or shank portion
- 1 Tbsp Dijon mustard
- 1 cup peach preserves (or apricot)
- 2 tsp grated ginger
- 1 tsp thyme, finely chopped, plus extra sprigs for garnish
- ½ cup water
INSTRUCTIONS
- Combine the mustard, peach preserves, ginger, thyme and water in a small saucepan. (Tip: Peel and freeze ginger ahead of time for easy grating.)
- Bring to a simmer over medium-high heat, and cook until the glaze comes together, about 5–10 minutes.
- Bring the ham to room temperature and place in the slow cooker. Make sure the lid is tightly closed.
- If using a spiral-cut ham, pull the slices slightly apart.
- If using a shank portion, score the top in a cross-hatch pattern to help the glaze soak in.
- Pour the glaze over the ham, covering as much of the ham as possible.
- Cook the ham on low for 4–5 hours. Baste the ham with the glaze every so often until cooking time is up. Serve warm.
