From the water to our plate, fish is best when it’s fresh. Yet, buying fresh fish can be tricky. So here are a few things to keep in mind: fresh fish will have bright, clear eyes; when possible buy a whole fish with its head still attached; the gills should be bright red; scales will glisten and adhere to the skin; and shrimp and prawn flesh should be translucent and odorless.
